Responsible dining, sourced close to home
• A culinary philosophy deeply rooted in the island: we source first from small-scale, organic local farms, livestock producers and artisan fishermen.
• Recognised excellence: our restaurant holds the Gusti di Corsica label and is a member of the Collège Culinaire de France.
Caring for the environment
• Priority given to local craftspeople and suppliers.
• A smaller footprint through innovative solutions: solar water heating, energy-efficient air conditioning, waste sorting, a policy of reducing plastics and, in time, on-site solar power generation.
• To help guests explore the island more responsibly, we provide 10 electric vehicle charging points in our private car park, along with a fleet of bicycles.
